INGREDIENTS:

2-3 cloves of garlic chopped

1 handful of pitted black olives

a few onion rings

juice of 2 lemons

olive oil

salt & pepper

italian herbs

1-2 pieces of any white fish

1 box of crushed tomatoes

fresh chopped basil

lay fish in a baking dish then coat with garlic, olives, onion rings, lemon juice, olive oil, salt and pepper and some dried Italian herb.

Pour over the crushed tomatoes and chopped basil then bake at 190C for 20-30 min until fish is cooked through. Serve with your favourite veg.
