This is a favorite! I add honey if i’m using this dressing over a chicken salad and leave it tangy if I’m using it over tuna salads.

Juice 2 lemons in a mixing bowl and add an equal amount of olive oil. whisk in 2 tablespoons of mustard and 1 tablespoon of honey. Add a tablespoon of fresh thyme leaves and season with salt, pepper and garlic flakes.
