INGREDIENTS:

800g de-shelled and deveined prawns

zest and juice of 2 lemons

2-4 cloves garlic chopped

1 inch ginger grated

2-4 chillies chopped

paprika to taste

mixed herbs to taste

salt and pepper

olive oil

Defrost prawns and dry them completely. Combine all the ingredients above to make a marinade then add prawns. Flash fry in a pan until the tails curl and they have cooked through stirring continuously.

Serve on a bed of rocket.
