THAI STEAMED SALMON AND ASPARAGUS

This is such a delicious and healthy way to cook fish

pre heat the oven to 190 C

Place a piece of foil inside an oven proof dish, line the centre with fresh asparagus and lay 2 or 3 portions of salmon (or any other fillet of fish) on top.

Coat the fish with chopped garlic, chilli, ginger, lemongrass (optional), the zest of 1 lime and the juice of 2-3 limes, a drizzle of olive oil and soy sauce and season with salt & pepper.

Loosely seal the foil into a parcel and bake for 10 - 20 minutes depending on how cooked you like your salmon.
