BAKED SPINACH AND RICOTTA CHICKEN FILLETS

This is such a healthy recipe and one of my favorite ways to cook chicken right now.

Pre heat the oven to 200 C

Make a slit in the chicken then fold over to semi butterfly, use a meat mallet to beat and tenderise the chicken. Then place the chicken fillets in a bowl and coat with fresh lemon juice. Leave to tenderise for about an hour if possible.

 

Then place spinach, ricotta and pepper dews in the centre, or any topping you want like spinach, garlic, ricotta and olives.

Fold them over and use toothpicks so secure the edges. Season the outside with salt, pepper, paprika and a drizzle of olive oil. Place in an oven dish thats filled 1/4 of the way with napoletana sauce (home made or store bought)

 

Bake in the oven for 20 -25 min then turn them over and bake for an additional 15 - 20 min.
